Bacon Wrapped Chicken Bites with a Chipotle Raspberry Sauce
6 Chicken Breasts ( grilled or cooked ) cut into bite sized pieces
12 strips of bacon cut in half and cooked
3/4 cup enchilada sauce
1 cup cup raspberry preserves
24 appetizer toothpicks
Grill chicken breasts on a grill or on a george foreman grill until grill marks are present fully and cooked . Cut into bite sized pieces . Cook bacon stripes in a skillet and discard bacon drippings. Wrap cooked bacon around cooked chicken pieces. Place toothpicks in to secure bacon. Place chicken/ bacon bites on a plate. Add raspberry preserves and enchilada sauce in skillet and bring to medium heat whisk together and place bacon chicken skewers in sauce and serve.
Yields 24 skewers
