Elk Marinade
1 cup Olive Oil
¾ cup Balsamic Vinegar
5 cloves Garlic
1 ea Shallot
3 sprigs Thyme
3 sprigs Rosemary
2 ea Bay Leaf
2ea Sage Leaf
Pinch Black Pepper
½ cup Red Wine
Huckleberry Sauce
2lbs Huckleberries
½ cup Red Wine
1/3 cup Balsamic Vinegar
¾ cup Rice Wine Vinegar
2 cup Sugar
½ tsp Black Pepper
3 ea Bay Leaf
3 sprigs Fresh Thyme
4 cups Veal Stock (beef stock optional)
2 sprigs Fresh Rosemary
Methods
Combine first 8 ingredients and reduce by half. Add veal stock and reduce by half again. Remove from heat and steep Rosemary in sauce for 20 Minutes. Strain all ingredients and serve.
