Latin Spicy Chicken Wings

3.5lbs chicken wings

Spicy Marinade:

½ cup fresh lime juice
½ cup orange juice
2ea orange zest
1ea lime zest
½ cup honey
¼ cup dark brown sugar
6 cloves garlic, minced
1 tbsp sesame seeds, toasted
2 tbsp cumin seeds, toasted
2 tbsp coriander seeds, toasted
2 tbsp oregano
8ea fresh basil leaves
1ea fresh jalapeno, seeded
2 tsp chili peppers, crushed
1ea shallot, peeled, rough chopped
¼ cup fresh cilantro, chopped
1 to ½ tsp kosher salt
1 tbsp dark chili powder
½ cup peanut oil

Method:
1. Combine all ingredients for the marinade in a food processor or blender and puree for 45-60 seconds.
2. Place wings in a large stainless steel bowl and pour marinade over top. Toss to blend.
3. Cover bowl with plastic wrap and allow marinating for a minimum of 12 hours in refrigerator. Toss once or twice during this period to ensure even flavor.
4. Drain of excess marinade. Arrange wings on a parchment paper lined cookie sheet.
5. Bake in oven for 40-45 minutes at 375 degrees.


Peaches, Nectarines, Craisins, & Tomato Salsa

8ea Peaches or nectarines ¼” dice
8ea Plum tomatoes ¼” dice
1 cup craisins
1 cup Green onions (white and green) ¼” dice
4 cloves Garlic, minced
2ea Jalapenos, seeded, fine dice
½ cup Lime juice
¾ cup Fresh cilantro, chopped
1 tsp Cholula hot sauce
4 tsp Ancho Chili powder
To taste Salt and pepper

Combine all ingredients. Blend well. Do not over mix. Refrigerate for 2 hours before serving.
