Chicken Caprese Pizza
Quick and Easy Pizza dough
2 packages yeast
½ cup warm water
½ cup melted butter
1 tsp salt
3- 4 cups flour
Dissolve yeast in water. Set aside in a separate bowl add melted
butter salt, Add yeast and water mixture. Add flour 1 cup at a
time. Stir together until dough is formed. Knead for 5 min and
cover with warm towel and let rise for 10 min.
Caprese Toppings
4 chicken breasts (diced into bite size pieces)
5 roma tomatoes (diced)
1 cup mushrooms (sliced)
2 cups spinach (chopped)
½ cup yellow onion (diced)
½ cup basil leaves finely (chopped)
2 cups mozzarella (shredded)
In a saucepan with a little olive oil or butter sauté onions and
diced chicken until chicken is cooked and onions are translucent
add diced tomatoes, mushrooms, spinach and fresh basil until
mushrooms and spinach have Roll out pizza dough and place on a
pizza stone or a greased cookie sheet brush dough with olive oil
Sprinkle 1 cup of grated mozzarella cheese over oiled pizza dough
then place on the sautéed toppings on top then add the remaining
cheese. Bake @ 400 for 15 min or until pizza is not doughy in the
center. Enjoy.
