Recipe for Zucchini “Crab” Cakes
Taken from “The Zucchini Houdini” by Brenda Stanley
2 cups of grated zucchini
2 eggs, beaten (or ½ cup egg substitute)
1 cup seasoned bread crumbs
2 Tbsp. mayonnaise or salad dressing (fat-free can be substituted)
2 tsp. Old Bay seasoning
3 Tbsp. extra virgin olive oil
Mix everything together. Blend well. Shape into patties. Fry in medium hot oil for about four minutes each side. Serve with cocktail or tartar sauce, if desired.
