Beef Wellington

Marinade
2 cups beef broth
½ cup water
1 package onion soup mix
4 sirloin beefsteaks
8 pieces bacon
8 slices provolone cheese
¼ cup chopped chives
8 small sheets of puff pastry dough
Sauce
8 mushrooms sliced
½ cup onion (diced)
1 cup whipping cream
Place beef in marinade for 4 hours. Sear beef with a little olive oil
on each side for 2- 3 minutes Roll out puff pastry. Place Seared beef
on top of pastry dough. Roll bacon around beef place provolone on
top with chives. Enclose meat with pastry dough. Place on a
greased cookie sheet and bake @ 350 for 15- 2o min.
Sauté onions and mushrooms in a little butter. Add Cream. A roux
can be added if needed sauce to be thicker.
* A roux is equal parts butter and flour that is added to a sauce to
help thicken it.
